What I Ate Today | Spring Edition! (easy vegan recipes)
I am showing you what I ate today! And it is the Spring edition! Although it is technically spring here, it’s still cold. So I still want warm comforting foods most of the time! I hope you guys enjoy this video and get some meal inspiration for the next time you’re cooking. Enjoy!
1 ripe banana
1 scoop Vega vanilla protein powder
1 tsp chia seeds
1 cup chocolate almond milk
1/2 cup frozen strawberries
3 ice cubes

Cooked 1 cup of rice. Steamed a bunch of veggies. Put it all together (you know how stir fry works by now).
1 medium white potato, chopped
1 large carrot, chopped
1 cup (or more) original plain almond milk
1/2 cup cashews (or a scoop cashew cheese if you have it on hand haha! recipe for it below)
2 tbsp nutritional yeast
1/2 lemon, juiced
salt & pepper to taste (about 1/4 tsp each)
1/4 tsp garlic powder
1 tbsp oil
1/4 cup white onion, chopped
1/2 cup mushrooms, chopped
handful of spinach
Boil some pasta. I made approx 4 servings. Boil the potato and carrot. Drain and add to a blender with cashews, nutritional yeast, almond milk, salt and pepper and lemon juice. Blend until smooth. In a frying pan, heat the oil and saute the mushrooms and onions for about 5 minutes. Add the sauce and cooked pasta and stir to combine. Add the spinach and more salt/pepper if you want. Finish with a sprinkle of vegan cheese!
