Raw Pistachio, Coconut & Lime Cheesecake | No-Bake Cheesecake | Vegan Dessert

Raw Pistachio, Coconut & Lime Cheesecake is a sweet treat for your eyes and tastebuds! This vegan cheesecake recipe is completely refined gluten-free, sugar free, dairy and egg free that is really delicious!

For the Base:
1 cup medjool dates, pitted
½ cup shredded unsweetened coconut
½ cup raw almonds
½ cup raw pistachios
3 tablespoons coconut oil
½ teaspoon cocoa powder
1 Tbsp lime zest, grated fresh
pinch of salt, optional

For the Filling:
2 cups cashews soaked overnight in water
¼ cup coconut oil
1 cup coconut cream (
1 cup shredded unsweetened coconut (
2 limes juiced
Zest of 1 lime
1 teaspoon vanilla
¼ cup maple syrup

For the Garnish:
Crushed pistachios
Grated lime zest

1. Blend all base ingredients, scoop out into 7 inch (18cm) baking ring and press down with your fingers, then place in refrigerate.
2. Blend all filling ingredients until creamy, pour onto base, smooth over with the back of a spoon and place in refrigerate for at least 4 hours or you can leave overnight.
3. Take out of refrigerate and cut into pieces. Top with your garnish and enjoy!!
4. Can store in refrigerate or freezer.
