Easy Vegan Recipes for Busy People

Today we are making some easy vegan recipes for busy people! These recipes are perfect for those days that you need to have a quick meal but want something tasty and satisfying! I suggest paring the second two recipes with some potato wedges or rice for a more complete and tasty meal :).

Spicy Sausage Zucchini Noodles:
1 zucchini
1 vegan sausage
1 tsp vegan butter
salt and pepper to taste

Tofu Skewers:
1 (12 oz.) block of tofu, cut into chunks like I showed in the video
3 tbsp soy sauce
2 tbsp maple syrup or agave
1 tsp sriracha
1 tbsp (or more) oil for frying

Mini Lentil Loaf Cups:
1/2 white onion, chopped into small pieces
1 carrot, chopped into small pieces
1 tbsp oil (or water for cooking the vegetables)
1 can (19oz.) lentils
1 tbsp ground flax + 3 tbsp water (mix and let sit 5 mins)
2 tbsp ketchup
1 tsp dried oregano
1 tsp dried parsley
salt and pepper to taste (about 1/2 tsp of salt and 1/4 tsp pepper)

Dipping sauce:

Mash the lentils fairly well (a bit more than I did in the video). Add all other ingredients and stir. Pack into greased muffin cups. Bake at 400F for about 20-25 minutes, checking to make sure they don’t burn. You want them to feel firm to the touch. Let cool for a bit before attempting to remove or they can break.
