🍌 ROASTED PEACHES 🍌
2 tsp. coconut sugar
1 tsp. chia seeds
Cut the peaches in half, remove the pit and place them on a baking sheet. Sprinkle with coconut sugar on top and bake at 200°C/390°F for 15 minutes. Add a dab of soy yoghurt to the steaming peaches and sprinkle with chia seeds and coconut flakes.
🍌 VEGAN FRENCH TOAST 🍌
3/4 cups soy milk
vanilla to taste
1 tsp. cinnamon
4 – 5 slices of sandwich bread
fresh or frozen berries
Blend the bananas with the soy milk, vanilla and cinnamon in a food processor or blender. Pour into a soup plate and let the sandwich brad soak up the liquid. Press down with a fork to get bread fully covered. In a frying pan, heat some oil or vegan butter. Fry the slices from both sides until golden brown and slightly crispy on the edges. Serve with fresh or frozen berries and agave nectar.
🍌 OVERNIGHT AMARANTH OATS 🍌
water & soy milk
white chocolate syrup
Place the oats, granola and amaranth into a large bowl. Add the raspberries on top and fill up with about two parts of water and one part soy milk. Add about a teaspoon of white chocolate syrup and sprinkle a few coconut flakes on top. Let everything soak overnight in the fridge and enjoy the next morning cold or heated up.
🍌 NANA BOAT 🍌
2 frozen bananas
1 cup frozen raspberries
1/4 cups coconut milk
1/2 fresh papaya
shaved dark chocolate
Blend the frozen banana with the raspberries and coconut milk. Because this is a thicker consistency with less liquid, you might need to pause in between to scrape the fruits down and continue blending. Cut a papaya in two, remove the seeds and fill it up with the homemade vegan ice cream. Finish off with shaved dark chocolate.
